Paccheri all’Arrabbiata

“Arrabbiata”  sauce is a condiment that leaves no room for uncertainty: the explosive combination of garlic and chili pepper is reserved for true lovers of bold, spicy flavors. We've chosen to pair it with equally assertive Paccheri - a pasta shape historically beloved throughout Southern Italy, despite being famously disliked by poet Giacomo Leopardi.

Ingredients

400 g Paccheri
500 g Rustic tomato purée
Garlic (crushed, skin-on)
Fresh chili pepper to taste
Pecorino Romano to taste
Olive oil, salt, parsley to taste

Step-by-Step preparation

In a pan, sauté the crushed garlic (with skin on) in plenty of extra virgin olive oil.
Step 2 / 5
Remove the garlic from the pan and add the tomato purée.
Step 3 / 5
Cook the sauce for about 20 minutes, adjusting the salt to taste. Meanwhile, cook the pasta in plenty of salted water.
Step 4 / 5
Toss the pasta in the sauce, adding the chopped parsley.
Step 5 / 5
Plate and finish with shaved Pecorino Romano.
