Farfalle with Genovese Pesto

The original recipe calls for the use of a mortar and pestle, but for reasons of time and convenience, Genovese pesto is now more commonly prepared with an immersion blender. There are many variations of this Ligurian recipe that include garlic, potatoes, or green beans. Here, we present the simplest version—one that best enhances the aroma of its main ingredient: basil.

Ingredients

400 g Farfalle
150 g fresh basil
150 g extra virgin olive oil
90 g grated Parmesan cheese
20 g pine nuts

Blend together the basil, olive oil, pine nuts, and Parmesan using an immersion blender until emulsified.

Cook the pasta in plenty of salted boiling water.
