Whole spelt tagliatelle are the perfect pasta format for preparing tasty first courses with seasonal vegetables. In this recipe, we use savoy cabbage—a robust-flavored winter vegetable—enriched with ham baked in the oven and crumbled into a powder. The result of this harmonious combination is a flavorful and appetizing dish.

400 g Organic Spelt Tagliatelle
1 large Savoy cabbage
60 g semi-sweet ham, thinly sliced
Olive oil

Step-by-Step preparation

Blanch the savoy cabbage in boiling water, then cool it in an ice bath. At the same time, bake the ham in the oven at 120°C (250°F) until crispy.
Step 2 / 4
Drain the cabbage and process the leaves using a juicer or vegetable extractor. Blend the crispy ham into a fine powder. Cook the pasta in plenty of salted water.

Sauté the tagliatelle in a pan together with the savoy cabbage sauce, adding olive oil and pasta water as needed. Plate and sprinkle with the ham powder.
