Sedani Rigati with Ventricina Ragù

Ventricina is the most iconic cured meat of Abruzzo. It is considered a noble salami because it is made from the finest cuts of pork. The meat, strictly hand-cut, is mixed with salt and finely chopped red pepper. The latter is the ingredient that gives ventricina its distinctive flavor. With this prized salami, we prepare a flavorful ragù to enjoy with our ridged sedani.

400 g Sedani Rigati
500 g Tomato passata
100 g Ventricina from Vasto
Garlic
Wild fennel

Step-by-Step preparation

Step 1 / 4
Dice the ventricina and lightly sauté it in a pan.
Step 2 / 4
Add the tomato passata and some wild fennel. Let it simmer gently for about 40 minutes. Meanwhile, cook the pasta in plenty of salted water.
Step 3 / 4
Toss the pasta in the pan over high heat.
Step 4 / 4
Plate it, and garnish with fresh wild fennel.
